Yesterday, in honor of Mardi Gras I decided to try something fun - Cauliflower Pizza Crust! Don't let the name or the main ingredient fool you it was delicious! Note: This recipe makes about a 9" pizza crust and yields 4 large slices or 8 medium size slices of pizza
Ingredients for the crust: 1/2 of a large cauliflower - chopped and riced 1 egg 1/2 c shredded cheese 1 tsp of oregano or italian seasoning 1 tsp of parsley dried or fresh Directions: Preheat oven to 400 degrease Chop cauliflower into small flowerets, remove the stems and leaves. Place pieces in a blender or food processor. Blend until it becomes a rice like texture. Cook cauliflower. Place cauliflower in pan and stir frie it until it is transparent or soft to touch. Cooking it will give it a brown color. Place all other ingredients in a blender or food processor (egg, cheese, seasoning) - blend until smooth. Place cauliflower in a large bowl and mix in wet ingredients this will create the dough. Once a greased pan or piece of aluminum foil mold dough into pizza crust. It should be about 9" in diameter. Bake crust for 15 -20 minutes, until golden brown and cooked through the center. Topping: You can top the pizza however you desire. In the picture above I used ground turkey, pizza sauce, and mozzarella cheese Once your pizza is topped bake it for about 5 minutes. Let cool for 3-5 minutes Enjoy!
