I had many request from all the ladies at my event to post this yummy recipe. Betsy Mitchell is a holistic chef and owner of Conscious Cuisines. Last night she prepared strawberry pies as one of the healthy snacks at our event. They were sooooo yummy!

Mini Strawberry Pies with Agar Agar

1 Quart local Strawberries(Robin Farms), chopped
1 Cup Local raw Sugar(3 Brothers Farm)
1 Package Graham Crackers
3/4 Stick of organic Butter, melted
3 T Extra Virgin Coconut oil
2 Cups Water
4 T Agar Agar flakes
Bring water and Agar flakes to a boil, then reduce to a simmer. Add Berries and Sugar. Cook for 10-15. Meanwhile, add Graham Crackers, melted Butter, and Coconut Oil to food processor and blend till fine consistency is achieved. Pat 1T/each of Graham Cracker mixture into lined mini muffin tin. Add Berry filling
Note: the Agar will set as the pies cool.
May be served with fresh whipped cream or True Whip(organic version of cool whip)
