I scream you scream we all scream for ICE CREAM! This sweet treat has a special place in my heart. As a child, I absolutely loved having a bowl of ice cream before bed. Little did I know that this fabulous treat was causing some of my health issues. Dairy often causes mucus to form in the body. This mucus can lead to allergies, skin issues, digestive issues (acid reflux, bloating, constipation, IBS), it can even cause cysts. The good news is that there are some healthy dairy substitutes! This weekend I treated my inner child to some homemade coconut milk ice - cream and I wanted to share that recipe with you! Chocolate Coconut Milk Ice Cream (4 Servings)
1 14oz can of coconut milk (I used the lite. If you like your ice cream extra creamy use the full fat) 2 tbsp. coco powder 1/4 c of honey (more if you desire it sweeter) 1 tsp. vanilla extract Optional: 1 tbsp. vanilla smart meal (protein powder) Directions: Combine all of the ingredients in a blender, and blend until smooth and creamy. Adjust the flavor to your taste, then transfer to a freezer-safe container. Place in the freezer for 4-6 hours, or until firm. Note: If your ice cream gets too firm in the freezer, allow it to thaw at room temperature for 15-20 minutes before serving.
